Amish Breakfast Casserole

Ingredients
1 pound cooked bacon
1 medium sweet onions shredded or chopped
6 eggs lightly beaten
4 cups frozen shredded hash brown potatoes
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded swiss cheese
Directions
Cook meat remove and then cook onion. In a bowl combine remaining ingredients. (I use a fork and mash cottage cheese till lumps are gone.) Stir in meat and onions. Transfer to a greased 9x13 baking dish. Bake uncovered 350 for 35 to 45 minutes till bubbly and set. Let stand 10 min. before cutting. (If using ham you may want to add more salt and onion salt and pepper.)
