Coconut Cream Pie

Ingredients

    1/2 cup sugar                                                  
    1 tablespoon flour                                             
    2 cups milk                                                    
    3 egg yolks                                                    
    2 tablespoons cornstarch                                       
    1 teaspoon vanilla extract                                     
    1 cup coconut or more to taste                                 
    1 tablespoon butter                                            
    EGG WHITES                                                     
    3 egg whites                                                   
    1/8 teaspoon salt                                              
    1/8 teaspoon cream of tartar                                   
    3 tablespoons sugar            

Directions

In a nonstick 1-quart saucepan, combine 1/2 cup sugar, flour and 1 3/4 cups milk together. Bring the milk to boiling point and scald the milk. In a small mixing bowl, whisk the remaining milk, egg yolks, and cornstarch together. Whisk until smooth. Temper the egg yolk mixture into the scalded milk. Bring the mixture up to a boil and cook for about 3 minutes or until the mixture is thick, stirring constantly. Remove the pan from the heat and stir in flaked coconut, vanilla and butter.

EGG WHITES:
Beat egg whites, salt and cream of tartar until soft peaks form.  Slowly add sugar and beat until stiff.  Spread over pie and sprinkle with coconut. Bake at 350 until meringue is set and golden.
