Rub:
1 T. paprika
1 T. kosher salt
1 T. brown sugar
1 lg. garlic clove mashed
1/2 t. oregano
1/2 t. thyme
1/2 t. rosemary
2 T. olive oil
1 T. lemon juice
Sauce:
2 T. olive oil
1/3 c. balsamic vingar
1/4 c. maple syrup
1 lg. garlic clove mashed
1 t. roasemary
1 T. brown sugar
1 T. corn starch
Directions
Mix rub together and rub over the meat. Bake at 350 for approximately 20 minutes until internal temperature reaches 140 F. Let rest for 10 minutes and then slice. If not quite done, then lay back in pan and put back in oven for a minute or two and it will be done.
Mix sauce ingredients all together in a saucepan. Cook over medium heat until mixture boils. If too thick, then add water until reaches right consistency (slightly thick). Serve over meat.
