Hot Spinach Red Pepper Dip

Ingredients
- 1 cup diced red bell pepper
- 1 cup thawed frozen chopped spinach
- 1 (8 ounce) package cream cheese
- 1 cup sour cream
- 1 large garlic clove minced
- 1 cup shredded Parmesan cheese
- 1/2 teaspoon salt
- 1 pinch freshly ground black pepper
Directions
- Melt 1 tbls. butter in a pan, add spinach, garlic and red pepper and saute until tender. Drain off any extra liquid. Remove from pan and keep warm.
- Combine the cream cheese and sour cream in the saucepan and cook over medium heat until hot and softened. Stir in the cooked spinach, red peppers, garlic, Parmesan cheese, ground black pepper and salt. Continue to stir until well combined and heated through. If too thick add more sour cream until desired consistency reached.
- Spoon hot dip into a serving dish.
