Filet Tips w/ Blue Cheese

Ingredients

Carmelized Onions

  • 2 yellow onions, sliced
  • Kosher salt and freshly ground black pepper
  • 1/2 cup good quality baslamic vinegar
  • 2 T brown sugar

Mushrooms

  • 1 lb. fresh portabello mushrooms
  • 1-2 tbls. butter
  • salt

Filet Tips

  • 2-4 lbs. beef tenderloin
  • 2-4 oz. blue cheese crumbles

 

Directions

Carmelized Onions:Heat a saute pan large enough to hold all of the onions with a bit of olive oil over medium heat.  Add the onions and saute until they just begin to color, tossing frequently.  Add the balsamic vinegar and brown sugar and stir or toss to combine.  Cover, reduce the heat, and let cook for about 30-35 minutes, or until the onions have cooked down and caramelized deeply.

Mushrooms: Melt butter in frying pan, add mushrooms and salt.  Cook over medium heat until liquid has evaporated. 5-10 mins.

Steak: Cut up filet into bite size pieces.  Heat heavy skillet over high heat.  Put tiny bit of oil in pan.  When pan is really hot add filet tips.  Season with salt and pepper.  Cook for as little a time as possible, just until tips are seared.  Remove from pan.  Let sit for 10 mins.  Drain juice off and then stir carmelized onions and mushrooms in with meat.  When it has cooled somewhat add blue cheese crumbles to taste.  2-4 ozs.
