Ingredients

 Asparagus Onion Casserole
1 lb fresh asparagus
2 med. onions sliced
5 T. butter
2 T. flour, maybe a little more
1 cup milk
1 pkg. (3 oz) cream cheese, cubed
1 t. salt
1/8 t. pepper
1/2 cup shredded cheddar cheese
1 cup soft bread crumbs
 

 

Directions

Saute asparagus and onion in 1 T. butter til crisp-tender about 8 min. Transfer to ungreased baking dish.
 Melt 2 T. butter, stir in flour til smooth, gradually add milk, bring to a boil, cook and stir for 2 min or til thickened.

Reduce heat. Add cream cheese, salt and pepper, stir til cheese is melted. Pour over veg. Sprinkle with cheddar cheese.
 Melt remaining butter, toss with bread crumbs. Sprinkle over casserole. Bake uncovered at 350 for 35-40 min or until heated thru.
