Bacon Spinach Dip

Ingredients

  • 6 slices bacon, diced
  • 8 ounces cream cheese, at room temperature
  • 1 cup sour cream
  • 1/4 cup freshly grated Parmesan
  • 4 tablespoons mayonnaise
  • 1-2 cloves of minced garlic, slightly sauteed or 1/2 tsp garlic powder
  • 2 cup frozen chopped spinach (thawed and squeeze dried with a towel)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded pepper jack cheese
  • 1 cup shredded cheddar cheese
  • Kosher salt and freshly ground black pepper, to taste

Directions

  1. Heat a large skillet over medium high heat. Add bacon, cook until done. Transfer to a paper towel-lined plate.
  2. Preheat oven to 350 degrees F. Lightly oil a 9-inch baking dish or coat with nonstick spray.
  3. In a large bowl, combine cream cheese, sour cream, Parmesan, and mayonnaise. Stir in bacon, spinach, mozzarella cheese, pepper jack and cheddar cheese; season with salt and pepper, to taste.
  4. Spread bacon mixture into the prepared baking dish; sprinkle with more shredded cheese.
  5. Place into oven and bake until about 20-25 minutes. Bake only until hot through, otherwise the spinach turns dark and the dip is curdled. 
  6. Serve immediately, garnished with bacon and parsley, if desired.
