Ingredients
Muffins:
- 1 1/4 cup arrowroot flour
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 tsp salt
- 6 tablespoons butter, at room temperature
- 1/3 cup vegetable oil
- 3/4 cup coconut palm sugar
- 2 eggs
- 1 1/2 tsp vanilla
- 1 cup sour cream
Streusel:
- 1/2 cup arrowroot flour
- 1/3 cup coconut palm sugar
- 4 tablespoons butter, at room temperature
- 1 teaspoon ground cinnamon
Directions
Thoroughly mix oil, butter and sugar. Add eggs one at a time, beating well after each addition. Beat in sour cream and vanilla until well-mixed. Add flours, baking powder, baking soda, and salt. Finally, add chocolate chips, blueberries, or other flavor.
For the streusel: Combine all ingredients and crumble over top of muffin batter.
Bake at 350 degrees for approx. 25 min.
