Sun Dried Tomato & Chicken Pasta

Ingredients

12-16 oz pasta

1 stick butter

16 oz bella mushrooms

3 cloves garlic

1 c chicken stock

1 c heavy cream

2 c milk

4 c diced cooked chicken (I used fried chicken thighs)

8.5 oz julienne cut sun dried tomatoes with oil

16 oz fresh spinach

1 8 oz cream cheese

2 c freshly shredded parmesan cheese

salt and pepper

Directions

Bring a large pot of water to a boil, then season generously with salt. Cook penne pasta according to package directions.

In the meantime, melt butter in a large skillet set over medium high heat. Add mushrooms and cook for about 5 minutes, until mushrooms have softened. Season with a pinch of salt and pepper, then add garlic, sun dried tomatoes and spinach. Cook for a few more minutes. 

Add milk, cream and chicken stock, let it cook for a couple minutes until hot. Add cream cheese and stir until melted. Add parmesan cheese, stir until melted and finally, add chicken and pasta.
