Black Walnut Cake

Ingredients
1/2 cup butter softened
1/2 cup vegetable shortening
2 cups sugar
5 eggs separated
1 cup buttermilk
1 teaspoon baking soda
1/2 tsp salt
2 cups flour
1 teaspoon or 1 tablespoon vanilla extract
1 1/2 cups black walnuts chopped
1 cup coconut
1/2 teaspoon cream of tartar
Directions
Cream butter and shortening, gradually add sugar, beat until fluffy and sugar is dissolved. Add egg yolks and beat well.
Combine buttermilk and soda, stir until soda dissolves.
Add flour to creamed mixture alternately with buttermilk mixture beginning and ending with flour.
Stir in vanilla, add walnuts and coconut. Stir well.
Beat the egg whites with cream of tartar until it forms stiff peaks.
Fold egg whites into batter. Pour batter into 3 greased and floured 9" pans or 2 pans and several cupcakes. Bake at 350� for 30 mins. Cool in pans 10 min. then remove.
