Rhubarb Cream Delight

Ingredients

1 cup flour
1/4 cup sugar
1/2 cup butter
3 cups rhubarb chopped 1/2"
1/2 cup sugar
1 tablespoon flour
12-ounce package cream cheese softened
1/2 cup sugar
2 eggs
1 cup sour cream
2 tablespoons sugar
1 teaspoon vanilla extract

Directions

Combine crust ingredients, pat into 10" pie plate. Combine rhubarb, sugar and flour, toss lightly, pour over crust. Bake at 375� for 15 min. Beat cream cheese & sugar until fluffy, beat in eggs, 1 at a time. Pour over hot rhubarb layer. Bake at 350� for 30 min. or until almost set. Combine topping ingredients and spread over cream layer. Refrigerate.
