Parmesan Mashed Potatoes

Ingredients

3 pounds potatoes peeled
1 tablespoon kosher salt plus 2 teaspoons
2-3 cloves garlic roasted
1/2 cup cream
1/2 cup milk
1/4 cup butter
1/2 cup sour cream
1/2 -1 cup shredded cheddar cheese
1/2 cup freshly grated parmesan cheese
4 pieces cooked bacon finely chopped
1/2 teaspoon freshly ground black pepper

Directions

Place the potatoes and 1 tablespoon of salt in a 4-quart saucepan and add cold water to cover. Bring to a boil, lower the heat and simmer covered until completely tender. Drain.
Mash the potatoes. Add the rest of the ingredients and mix well. Put in a casserole dish and sprinkle with additional parmesan cheese (however much you like). Bake at 350 for 30 mins. or until golden brown and bubbly. Let rest 10 mins. before serving.
