Spaghetti Squash with Sweet Peppers

Ingredients
1 medium 2 lb. spaghetti squash
1/2 medium green bell peppers sliced
1/2 medium sweet red peppers
4 mediums fresh mushrooms sliced
1 small onion chopped
1 tablespoon olive oil
2 medium tomatoes quartered
1 garlic cloves minced
1/2 cup chicken broth
1/4 teaspoon salt
3 tablespoons shredded parmesan cheese
Directions
Cut squash in half lengthwise; discard seeds. Place squash cut side down on a pan with a small amount of water on it and bake at 350 for approx. 45 mins or until tender when poked with a fork.
In a large skillet saute the peppers, mushrooms and onion in oil until tender. Add tomatoes and garlic; saute 4-5 mins. longer. Add broth and salt; simmer uncovered 3-4 mins. When squash is cool enough to handle, use a fork to separate strands. Mix squash in with pepper mixture and sprinkle with parmesan cheese.
